This black olive oil is absolutely delicious! I love the little bite of spice it gives. Perfect for dipping your crusty baguette or drizzling over a salad. And don’t be fooled by the name; black olive oil is not black! It is made from a variety of black olives called Mavrolia. At the end of October, as soon as they ripen, the olives are harvested and pressed the same day. These exceptional olives grown in beautiful Trifilia, an area blessed by its climate and the richness of its soil, have a very distinctive flavour and an acidity level inferior to 0.3%. For 2 months, this unfiltered olive oil is left to decant naturally resulting in oil with no residues rendering it perfect for cooking.
